An early breakfast just isn’t for me! In Holland it is very common to eat a sandwich in the morning. If I would eat bread in the early morning, I would have to sip on water after every bite. No, it’s not for me. I usually eat a piece of fruit like a banana or an apple instead. That’s why I absolutely love lunch and preparing a nice and delicious one. A lunch that will get me energized for the rest of the afternoon.
Brown breads are my favorite and I like to go to the market to get some brown baguettes with pumpkinseeds or sunflower seeds. Yum! When I buy a couple of baguettes, I refrigerate them for later on that week. A piece of baguette with peanut butter is usually the first thing I eat. However, a good slice of cheese is also one of my choices because it goes so well with salads and bread.
This time I have a simple lunch recipe for all of you who like crunchy pieces of baguette with healthy cucumber and tomatoes on the side. First, I cut the defrosted baguette in slices and put the slices in a mini-oven for a couple of minutes until baked crunchy and crisp. The bread really tastes as if you have just picked it up at a bakery. Then I grease the slices of bread with hazelnut butter. Delicious! I eat the baguette with sliced cheese and some cucumber and zebra tomatoes. These tomatoes have beautiful stripes on their skin and look and taste lovely. No life without some spice so I use some mashed yellow/chili pepper and garlic and mix it with the nut butter. Sprinkle some lime juice on top of the tomatoes and cucumber and you have a fresh and hearty lunch!
