This lovely meal of spinach with lentils and vegan skewers will brighten up the day for you and your family. Being healthy was never this delicious and it really is an easy dish to make!
A family member of mine has recently been hospitalized. Fortunately it’s getting better and it’s a matter of getting back his strength. He can be a picky eater and has to be convinced that something new can taste great too. Still I can totally understand and believe him when he tells me that the food in a hospital isn’t the best he has ever had. After all, a hospital is a place where people are taken care of and everybody is provided with different meals.
He understands that too of course so I offered to bring some home cooked food. I made some spinach with cream (one of his favorites) and added lentils, cayenne pepper flakes for some spice and color and grated coconut. Coconut goes so well with spinach and it is something I picked up when I had my very first Indian dinner in a restaurant in London. It tasted so lovely and I made some too this time. Some vegan chicken skewers with sesame seeds, cucumber and tomato made this dish pretty as well. The sesame seeds are roasted a little bit when they are added to the vegan chicken bits in some olive oil. It goes well with rice on the side to which I added a bit of saffron.
It’s a tasty, well flavored and nutritious meal. It’s food that has brightened up the day, for my family member is in a place that can use some cheerfulness. So why not bring some delicious food, I thought! A real ‘get well soon dish’ but also just for any day. I’ll bet children will love this as well and because of the skewers it’s fun too. Children can help making the skewers but beware of children eating the bits before threading them! I bet they can’t resist!
