My brother has a real sweet tooth and asked me to bake something nice for him with honey instead of sugar. I know he is very fond of chocolate so a chocolate cake is what came to my mind first. My best friend also likes cake but because she hardly eats any sugar, a normal cake is often too sweet for her. So I decided to bake a brownie like cake with honey and fruits and to give my brother and best friend very small sized chocolate cake bars . They can take only one little piece at a time IF they can resist! I doubt it. This cake is also very easy to prepare.
Usually my chocolate cakes are very rich, sweet and full of nuts and I love to bake this cake during the winter holidays. This time I wanted to bake a lighter and less sweet one so instead of condensed milk I only used soy milk and a couple of table spoons of honey. Because I added some chunks of a dark chocolate bar with hazelnuts, the cake is still sweetened perfectly. Another difference with my usual recipe is that I used ghee instead of butter. Ghee is clarified butter so it contains less water and milk solids than regular butter. Ghee is often used in Indian dishes such as main meals, breads and sweets. The color is somewhat golden and it’s excellent for use on higher temperatures. This cake was perfectly soft because of the ghee.
I also added some blueberries and raspberries to the cake mix for fresh flavors and grated almond and coconut chips for crunch. It is a lovely dessert but far less sweet than a heavy chocolate cake. I tasted more chocolate than usual so I loved it very much too! For all the chocolate lovers out there: this is a must eat and must try!
