Yesterday I woke up feeling the cold of an autumn day. I immediately knew I needed something hot not knowing exactly what! After a lovely breakfast with my sister-in-law, little adorable nephew and a friend in the city, I went to buy some shoes. It may not be officially autumn but my damaged shoes say the season of rain has come alright! Wet and cold socks and feet forced me to buy new shoes on my day off. Yes I am a lady and no, I don’t enjoy shopping for shoes 😛 I love to cook!
After some shopping I decided to buy a little box of coconut milk, just in case. Later on I learned that both my father and sister were ill. Coughing, colds, basically all the stuff I went through past weeks. So I decided to make something spicy and hot(always good when having a cold) with coconut milk. I used a great mix of some fine spices such as cinnamon, ginger and cumin that are good against a cold and cough. Result: a delicious eggplant-potato curry to which I have added some vegan chicken chunks. This dish goes perfectly with rice but a naan or paratha would be delicious too! So if you are also craving a hot and spicy meal or just even a spicy wholesome meal without the heat, follow the recipe below. I promise it will make you feel all warm inside 😉
