It was such a cozy and enjoyable day yesterday! Full of family fun! My (paternal) aunt, who usually visits us once in two to three months, came to visit. She brought some snacks like she often does but this time I had a big surprise too! I baked an insanely delicious Coffee-Hazelnut cake! I know she loves coffee very much and my cousin, who also visited, requested me to surprise her with a cake she had never had before in my home. Well, I can tell you; this cake was gone so soon, I even thought of baking a bigger one next time! My best friend’s partner even said, it was one of the best cakes he has ever had. It truly is a great one for your family get together, parties and dinners!
I often make chocolate cakes or carrot cakes but this was such a good and delicious alternative. I like the taste of coffee in cakes too but I almost always need a crunch in my food too. Can’t help it, it’s a thing. So when I thought about a cake with coffee and a crunch, my favorite coffee taste inspired me. When I don’t have a frozen coffee, I always have a lovely hot cup of Heavenly Hazel at the Douwe Egberts Cafe here in Rotterdam. It’s a coffee with hazelnut syrup, whipped cream on top with crushed pieces of hazelnut, yum! I baked two small ones for my sister who doesn’t like nuts and I couldn’t even see how fast she ate these two cakes. Gone in less than 3 seconds I guess!
The combination of coffee and hazelnut flavor is insanely good so I made a coffee cake with hazelnuts that I have crushed and roasted with a bit of vanilla sugar. It tasted so much like the famous hazelnut pastries we love. I topped the cake with a cream of mascarpone combined with whipped cream and added roasted coconut and vanilla to the cream. Melt some dark chocolate, dip some pecans in it and you will have the perfect amount of sweet and a lovely autumn like decoration for this cake. Do try, especially in this season!
