I have said it before and I will say it until my last breath: I love pasta!! In any form and shape there is! One of my all time ‘easy’ favorites is macaroni! Children love it, the shape is funny, it mixes well with other ingredients and it cooks quickly. Do I need to say anymore? Spaghetti is also one of my favorite foods. Although I love pasta with a tomato sauce on top, just (stir) frying pasta with garlic,onions and chili powder can be amazing too and that is what I want you to experience yourself with this recipe 😉
With often busy afternoons and evenings, I like to cook before lunchtime and on that time of day I want it to be quick and easy. Still, even when you are busy, you want to eat something flavorful, right? Never make concessions on flavor people! Take that from me, the one who spoons her food, always!
Because I love the combination of tomatoes with pasta, I’m adding some of these juicy red ones almost at the end so they don’t melt in the dish. To keep this dish balanced in my own way, which means a little bit of sweet, a bit sour, salty and hot,I used pickled baby corn. It adds crunch and the perfect amount of sour. Don’t be too cautious with the garlic. Good proteins in the vegan chicken/vegan ham chunks will make this dish absolutely a fulfilling dish on rainy and colder days such as these now in Holland.
