“The cold never bothered me anyway!” (Yes I’m using a Frozen reference,love Elsa) The cold is not able to stop my energy, nor does it stop my ice cream cravings. Ice cream is good in every season!
This year my autumn has started off with a good new habit: a daily walk of 60 minutes or more! I love it! Love the cold, love the wind and love all inspirational colors. Still, besides walking,we have to eat right? So I thought yellow is a lovely color in autumn and I wanted to use it in a new kitchen experience. It didn’t take me long to figure out what to cook.
I am ALWAYS in for an ice cream treat. I have made my own version of an Autumn icecream with Lotus cookies that are perfect because of their crunch and mixed spice winter taste. I have also used coconut and crushed hazelnuts that I have toasted in a pan and some lime juice and lemon extract for freshness in the sweet. No ice cream machine needed for this Autumn treat! Double win! It turned out lovely! An easy peasy/creative ice cream with delicious ingredients that surprisingly go very well together!
