‘Carrotcake! Where is our carrot cake? When are you going to bake your carrot cake again?’ These are the questions I get most of the time when hanging out with two of my cousins. You would think that questions like: ‘So have you been on a date lately?’ or ‘How’s work?’ are things they would be interested in, but nooo! They want to know when that promised carrot cake is coming. I love baking of course so I would be lying if I said their questions bothered me! We are all hooked! Carrot cake is absolutely one of my all time favorites and I have a great recipe for it but I like it best around Christmas and on very cold winter days. This time, I was the one craving those lovely winter spices and dark sugary taste. However, in stead of a cake I was really in the mood for carrot cookies! I have been baking cookies a lot lately to improve my cookie baking skills so why not bake these, I thought.
I even baked the cookies twice this week ;). The second time, I made the cookies without rolling the dough and used only my hands to make the cookies round shaped. I made them slightly thicker too as you can see on the picture above. However, rolling the dough is more fun for kids so it depends on who you are baking these cookies with. Either way creates delicious cookies!
Because I bought carrots and baby pumpkins this week, I wanted to make at least two dishes with the baby pumpkins. These cookies and a savory dish. Of course I have used the delicious ingredients such as mixed spices, walnuts, carrots, coconut and raisins that I use in my carrot cakes but the baby pumpkin really gave these cookies a yummy twist! Throw in some orange zest to complete this little package of flavors. Since the season of colors, coziness, pumpkins and joy is here, why not make a delicious cake in a cookie your self?
