One pot dishes! Easy and if you add the right ingredients, delicious as a cup of hot tea on a cold winter day! Once a week I make a one pot dish with rice, vegetables and often some vegan bits. All I have to do is put my favorite ingredients in my rice cooker and let the machine do the work. Convenient right? Adding some balsamic vinegar created a different taste than my regular rice dishes. A must try! The beauty of this dish is that you can vary with so many vegetables. I have used only carrots but think about greens too when you try this dish at home.
Although I love cooking,I love it most when I know I have lots of time to day dream in my kitchen about vegetables, spices and herbs. Thinking about how a dish can turn out in looks and taste are parts of my sweet dreams. When I wake up, I get excited about cooking and I always,always wish I had all the time in the world to cook whatever comes to my mind. The weekend is therefore the perfect timing for experimenting in the kitchen.
Inspiration is not bound by time
Inspiration however, is not bound by time or limits. It just comes and I never stop to take advantage of it. Even if I don’t have enough time,I write everything down. Sometimes I can implement my inspiration immediately. This dish is one of those dishes when limited time and a wish for great food came together and forced my brain and heart to do some kitchen magic. I have put some rice,onion,garlic,pepper, vegetables, olive oil and spices with balsamic vinegar in a rice cooker with water and let the rice cook with all the ingredients. I have fried the vegan bits with tomatoes in a separate pan in some olive oil and added these to the cooked rice. Of course you can prepare this dish on your stove too in a pan with a lid. You have to cook the water with rice until it boils and then let it cook on low heat until the rice is done.
