Spinach and brown bean dahl. Brown beans are actually my favorite! It is such a simple but delicious plant based dish. Cooking spinach and brown beans was also my very first cooking experience ever. The dish in this blog is a fun and upgraded version of the original dish we have been eating for years. The one meal my father taught me to cook to show me the basics of every day cooking.
Almost 25 years ago, when I was 10, my parents separated and I went to live with dad and my little brother. Although our vegetarian lifestyle would start a year later, we often ate just veggies with rice or dahls. The situation at home made us grow up fast and my father wanted us to learn how to cook as soon as possible. Being able to cook your own food was a necessity and empowering he always said. So when I first starting cooking I didn’t think it could be a fun activity but rather a needed quality. I soon learned that I actually enjoyed and loved cooking!
This first dish was an easy dish but dad knew we loved it. He taught us how to prepare spinach and brown beans. He showed us how to cook rice as well. That day we made a whole dish by ourselves. At the time we only used garlic and onion powders so we wouldn’t have to cut some thing. It was easy and fulfilling because of the greens of spinach and the proteins in the brown bean dahl.
Being my nostalgic self, I cook this dish very often. My younger sisters loved this too growing up and now my little nephews and niece eat this without any complaints also. However, how good an old recipe may be, playing around can be so much fun. That playfulness created this upgraded version of spinach and brown beans. Because we use alternatives for meat nowadays, I like to add some vegan fish too. Spinach with cream is absolutely one of my favorites but I really wanted to make a vegan version this time. Therefore I made the cream with soy milk and cashews for a creamy taste and look. Together with the good old brown bean dahl, it was a ‘yummy in my tummy’ happy moment again.
