Pasta. I present to you: a lovely vegan pasta dish in cashews, coconut milk, spinach and tomatoes with delicious vegan bits, eaten by me in my new coconut bowl! Ahh.. Food tastes better in that bowl, especially pasta!
As you all know, I cook pasta once a week, every week. So being creative with my pasta dishes is a must for me. I like to vary with ingredients and surprise myself and you of course. It has kinda been a cashew week for me because I made several dishes with cashew nuts. Cashews are a great ingredient for dishes. Because of the sweetness, cashews are great in desserts and sweet breakfast options. However, cashews do so much more, especially in this pasta. Cashews adds crunch and proteins to the soft pasta, creaminess in the sauce and sweetness in the salty and savory taste of tomatoes, garlic and onions.
I bought a big pack of cashews and putting them in the pasta was one of the best ideas ever. Usually eating pasta is a never ending tale but because of the cashews, you really get fulfilled after just one bowl. You don’t want to miss this dish in your list of perfect autumn and winter meals!
