Of course I don’t want to go celebrate my holidays without leaving you a delicious recipe for a dessert! Christmas, or any other holiday for that matter, is not complete without a dessert. Whether it is a delicious fruit pie, a bunch of cheery cupcakes or a Christmas pudding, serving no dessert is not an option in my family. Every family meeting is an excuse to have some cake so for Christmas I have this delicious home made White Chocolate-Strawberry & Salted Caramel Bundt with cashews. Are you drooling already? It is vegan and you can top it with as many fruits as you like. So you CAN make it a bit healthier. Sort of, right?
I had so much fun baking this and taking the snowy pictures already felt like Christmas. Powdered sugar really is a beautiful decoration food. To veganize my bundt, I have used a vegan dessert instead of yogurt or milk. You can use a plant based milk, sure. However, just as tasty and dense a yogurt can make a cake, this vegan dessert did too. You should try this as an alternative! It was a custard like vanilla dessert and I was mixing the batter and eating dessert at the same time. Such delicious dairy free sweetness can not stay untouched for long!
I haven’t made my carrot cake yet so to spice this cake up and really get into that holiday mood, I have added some cinnamon and some gorgeous orange zest. Do not bake this cake without these two ingredients! It creates a perfect yuletide feeling. I have also used some coconut milk just because I love it so much. Also some dark brown sugar for a darker color of the cake. I think the dark brown sugar complements the salted caramel bits I stirred into the batter very well! This year we will probably have an intimate Christmas celebration with a lovely dinner, snacks and dessert. We will be playing some games like 30 seconds charades game in which two teams play against each other. You pick a card with five things written on it. It can be anything and you have to tell your teammates what five things are written on the card but obviously you can not say the word. This has to be done in 30 seconds with an hour glass. Nerve wrecking game and I love it hahha!
