I actually made this one for my snacks an bites table on Christmas day but don’t let that stop you from making and eating this all year. My sister-in-law is a real picky eater but she actually loved this one. I had made home baked bread too for this spread. So if you want your picky eaters/ kids to eat some vegetables, this a convenient way too!
Because I wanted a vegetable spread with more than only one vegetable, I have added grated carrot and sliced red cabbage. Always keep the rainbow in mind when you prepare your food. Different vegetables make your food healthier, colorful, playful, pretty and tasty because of all the different structures. A feast for your eyes and stomach and a great idea for breakfast, lunch or snacks.
You can eat this spread on a sandwich or toast. You can also use it as a healthy dip for your vegetables. It is a delicious alternative for hummus and very easy to make if you buy a box of tahini beforehand (sesame paste). All you have to do is cook the vegetables in some oil and spices, mash it with a fork or a blender and add some tahini. You can store it for a couple of days in the fridge in a jar.
