New year,new chances! After all the holiday food it is time for healthy food again, right? Just remember: healthy should never be equal to boring. This Cauliflower in a Cashew-Pecan-Tomato sauce is anything but boring. Promised! Very simple, very easy too.
So with this cauliflower dish I have made one of my favorite dishes I like to eat with rice: vegetables in a sauce of nuts. I have not only used cashews but pecans too to make this sauce really nutty. Although I am from Indian origin, I never had traditional Indian food before I went to London for the first time in my life back in 2007. The almighty Indian kitchen then revealed itself to me and I have never abandoned it! My great grand parents left India to go work and live in Surinam. With all different cultures there such as Chinese and African, the way we cooked our foods changed too through diversity. The way we prepare our foods at home now is in many ways very similar to traditional Indian cooking but on other levels different too.
Before I ever ate Indian food, I never knew people actually made vegetables in a sauce with nuts. Absolutely nuts right? Who wants to miss out on delicious dishes like that? We were used to eating the same kind of dishes every week when I was a teenager. However, now I love to experiment and mix ingredients to create a brand new recipe.
So let’s talk about nuts baby! Nuts are very healthy and a great vegan source of proteins. They leave you fulfilled with just a small quantity. When you add nuts to your breakfast, lunch or dinner, your appetite will be satisfied even more. Still, what I find most important is that nuts are so frikkin delicious! You can make the sauce in advance too and store it in your freezer. Heat up the sauce in a pan when you need it and add cooked vegetables to it for your favorite dish!
