Ok, so you were looking for a healthy dish but looking at those recipes, you instantly knew that those dishes wouldn’t satisfy your appetite. In winter time, a more wholesome meal is needed. When it is cold outside you obviously still want to eat healthy foods but eating only salads with greens and vegetables to stay healthy, just won’t fill the belly.
Therefore this rice salad will be such a good option for a nutritious AND fulfilling meal. I got my inspiration for this dish, watching my favorite cooking channel. The cook used multi grain rice and some tomatoes to make the salad. I am making this salad with more ingredients and some spices so it can be eaten as a main meal instead of a side dish as shown on the cooking channel. Because of the spices it will definitely taste better than plain rice too! For example, I have added a garlic clove to the rice before cooking. Adding some salt and pepper will season the rice beautifully. You can always add capsicum/paprika powder or chili powder too.
It is a very easy dish too. Cooking rice and cutting vegetables are probably the hardest parts. Ok, frying the tofu can be challenging for some too. I will thoroughly explain in the recipe. Get your cutting boards and knives out of your cupboard and let’s make some wholesome food!
