Pink Overnight oats with Salted Caramel Bits and Vanilla will make you very popular at breakfast time on the 14th of this month or just any other day. Best part? It can never go wrong. No heat or cooking required and you need almost zero time for preparation.
Can you believe it is February already guys? Did the previous month actually go by really fast or is that just me clinging on to winter time? Well, I needed some consolation so I told myself to look forward to the most pink and red day of the year: Valentine’s day. Not because I like this day so much but because of all the chocolates in stores haha!
So last week, I decided to make a pink overnight oats dish with some salted caramel. I used coconut rice milk because my favorite oat milk wasn’t available at the store I was shopping at that day. Next time I’ll add oat milk but believe me when I say that this one was so yummy too. My oatmeal already had grated coconut in it so this coconut plant milk added the same kind of lovely and creamy taste to the whole dish.
How to make these overnight oats? It doesn’t get any easier than this: Pour some oats with coconut and whatever dried berries you like in a bowl or mug. Add the plant milk of your choice, salted caramel bits (so the usual pinch of salt is not needed) vanilla extract/vanilla sugar and some maple syrup. Put a plate or lid on the bowl and let the milk soak in the oats for one night. There you have your very simple but dessert-like delicious overnight oats breakfast. Once upon a time a girl named Mili went to her visit her dear mother who lived in another village. A friend of Mili was very happy to bring her to her mother because she had to travel quite a distance through different forests and meadows than she usually did.
After half a day of travelling through the forest, their path continued through very beautiful meadows just one mile away from Mili’s mother. Mili had never seen so much beauty in one place before. Excited by this miracle of nature, she wanted to get out for a minute or two to admire the view. Her friend insisted she’d stay in the carriage because these meadows were filled with creatures no one had ever seen but heard a lot of. Mili however was quite a curious girl. She always thought these stories were fairy tales told by people to scare children and to keep them from ruining the lovely flowers.
Ignoring her friend’s pleads, Mili got off and asked her friend to join her but he was afraid something might happen to his carriage. “Who will take care of my horses?” he asked. “That’s fine then, I won’t be long” Mili said, “I just want to pick some flowers”. Before her friend could stop her, Mili walked into the tall grass. Beautiful blue,pink,red and yellow flowers caught her eye and she felt so at peace in that lovely place.”Wow! Mother will absolutely love these red ones”, she thought. When Mili had finally filled her basket with flowers, she saw a peculiar looking flower. While all flowers stood tall, this flower was facing downwards. Mili absolutely loved these strange looking flowers and picked a couple. Then suddenly, she heard some voices in the meadows, louder and louder…Mili wasn’t frightened but curious what those voices were saying. Then her friend called her to come back at once. He sounded frightened and wasn’t happy with Mili in those meadows in the first place. “Perhaps it was him making those sounds” she said to herself without actually believing it. Still, she made her way back to the carriage. Mili showed the flowers to her friend. He had never seen them before either. Mili decided not to say anything about the voices. “Can we just go then?”, her friend asked impatiently and still quite scared. Once Mili settled in to continue their travel, she suddenly heard the same voices sing:
“Oats and Oats, we have loads, pink or blue we love them too.
Pour some milk on top indeed, this will be all you ever need”.
Startled by the voices, Mili’s friend made the horses walk faster. “Obviously there are magical creatures in these meadows Mili”, he said with a squeaky voice. “You have made them angry by picking the flowers! I knew I shouldn’t have let you get out!” Mili disagreed. “That doesn’t even sound true my friend. That song was actually really sweet!”
Once arrived at her mothers home, Mili told her mother everything about the meadows, the flowers, the beautiful voices singing a song. Her mother asked her to repeat the exact words Mili heard. Mili remembered every word and repeated every sentence a couple of times. Suddenly Mili’s mother had an idea. She boiled some milk and added the downwards facing flowers to the milk. To their surprise the milk turned into a pretty pink milk. Mili said that these weren’t just any flowers. These were magical flowers! “So the meadow flowers truly are enchanted!” Mili shouted. Her mother laughed and nodded. Yes Mili you have really brought some magic into our home. However, these aren’t flowers, but a kind of grass. It is an enchanted oat plant and when cooked,these oats are delicious. You have truly made this visit unforgettable, you curious little girl”. Mili smiled and she looked at her friend who was able to smile a bit too.
Mili, her friend and her mother had a lovely pink oat dessert that evening and at night Mili dreamt of meadows with singing flowers that asked her to visit again soon...
