A delicious breakfast that tastes like dessert? Yes, with these yummy cashew milk overnight oats with marshmallows, I am sure you won’t say no to oats! When I made this dish, my 2 year old nephew just had to try. He said: “I ate your food aunty” 🙂 He is so adorable, I could just eat him! These oats were a great alternative though haha!
So this week I really wanted to eat some overnight oats again but I wanted to try a recipe with a different kind of plant milk. My ultimate favorite is oat milk. Still, we also need to get out of those comfort zones, right? Well, I can assure you, cashew milk is such a delicious alternative for oat milk or regular soy milk. Its creamy texture and taste gives the oats all the luxury it needs to be a great breakfast or dessert without adding real cashews. You can add nuts as a topping though.
I have added some mini marshmallows that give some extra color and sweetness and marshmallows are a fun option for kids. You can add (chocolate) sprinkles too. The sprinkles I used, gave the oats a romantic look as well. I always add some raspberries and blueberries because they go so well with the oats. My oats already contain grated coconut. Ever since I discovered this one, I don’t buy the regular one. My cousin who read my previous blog about overnight oats, loves oatmeal and was curious about this easy breakfast. I gave her my recipe and she told me she really loved this alternative for hot porridge. She thought it was delicious and easy. I am not a breakfast type myself because it can be hard for me to eat something in the early morning but this breakfast truly was fun this week! Read on for the recipe.
