A bowl full of baked potatoes. Plain? I don’t think so! Sometimes potatoes are all you need. The great thing about potatoes is the great texture to which you can add YOUR favorite flavors/spices. For example: I have added laos/galangal powder and bay leaves. These spices and herbs are so versatile, have such a depth in flavors and are very good for your health. Too yummy! Add one spice or a dozen? It is up to you! So.. is it boring? Never. These are my spicy potatoes! Serve with salad and raw veggies!
In my lovely circle of friends and family, lots of people have been feeling sick and experiencing nausea lately. Unfortunately, so have I. Yes, I have difficulties with taking a break when I need one. Often I take too much on my plate until a heavy kind of flu forces me to take it a bit easier. I am getting much better at setting boundaries and taking breaks but this time the flu was just too contagious. Eating became a struggle the first days.
So how did I come up with potatoes for dinner then? Some say you should eat soups and light foods when feeling sick while others say just eat what you feel you need to eat. Strangely enough, I really craved potatoes after a couple days of the flu. I decided to make spicy baked potatoes. At first I wanted to oven bake them. However, after heating the oven, the power just went out at home. THAT was my sign to just bake potatoes on the stove. I had already put the potatoes, onion and garlic with olive oil in a bowl. Because I was planning an oven meal I had cut the potatoes and onion in big chunks. I didn’t cut the garlic and left it unpeeled so this recipe is very easy and quick to prepare too.
These bigger ingredients tasted incredible when baked on the stove. The onion really tasted more like a vegetable because of the size. The sweetness and softness of both onion and garlic after cooking!! Yummm..I have added capsicum/paprika powder, ginger powder, masala, black pepper and some delicious bay leaves. Of course, don’t forget the laos powder/ galangal powder! It really is a great spice in this dish too. The result was a delicious baked potato dish that made me feel much better and fulfilled too.
