I come from a family that has its origins in india. We often ate rice and rotis (flat breads) growing up. Although I love rice and I feel it is a must with some dishes, I am very fond of potatoes too. Potatoes are also very versatile. Of course you can just boil potatoes and eat them with vegetables. Sometimes that is all I need. Still, I never forget to season them. Potatoes can be very satisfying but have to be tasty too. Adding a bit of olive oil and salt& pepper can make potatoes go from plain to absolutely delicious.
This time I wanted crispier potatoes but didn’t feel like peeling and cutting a bunch. Especially when you want to cook fast or you don’t feel well, it is convenient to keep precut potatoes and veggies at home. I bought some pre fried sliced potatoes from the freezer and frozen beans too. It saves a lot of preparation time and these veggies are still good for you. The vegan mince was also flavored but I always like to add some of my own spices. How did I prepare this comfort food? In a pan I have heated some olive oil and added garlic and onion. After frying these, I have added the vegan mince, frozen potato slices and green beans with some of my favorite spices. This way everything mixes well before you put the whole dish in the oven. Just cook everything for about 5 minutes on the stove and then it is ready to put in the oven. The oven will do the rest and will bake the potatoes and mince crisp and tasty. I have enjoyed this hot oven dish a lot and I hope you do too!
