A rice noodles dish is probably one of the best options when you have a busy day. You don’t have to cook them. Just soak the noodles in boiling water for a minute or two. Throw in some veggies and tempeh and you have a delicious dish that tastes and feels like a yummy ‘take away’. I have added my own peanut sauce for that real exotic taste!
For quite some time, I have wanted to make a homemade peanut sauce but because we are all very busy, buying peanuts and crushing them was no option this time, how good they may taste. No, this time I wanted a quick but still tasty sauce. Yes tasty, because I never settle for less than tasty. So the main ingredient had to have a great peanut taste. Well, what ingredient do we all have at home for those delicious breakfast sandwiches? Peanut butter of course! I like the crunchy one with little peanut pieces in it but any peanut butter will do. I have added some coconut milk because of its thickness and creaminess so you really get a sauce instead of a watery peanut butter thingy. Yes that is a word.
How to get this sauce amazingly yummy? Well, I have added a piece of fresh grated ginger. Ginger has amazing healing qualities and I always have a piece in my freezer. You only need one inch of ginger and grate it, some garlic, capsicum powder and any kind of pepper. Voila: there you have your homemade tasty peanut sauce.
Whilst soaking the easy rice noodles, I fried the tempeh and cut my broccoli. You need to stir fry the broccoli, add the fried tempeh and then the rice noodles. Pour the warm peanut sauce on top and mix it all well. I bet you can’t say no to this wonderful vegan dish and it is also a nice gluten free meal!
