Easy and fulfilling Tempeh-Potato-Carrot Patties! Simple and quick patties meant to be made with fresh lime juice, yum! I ate these delicious patties with a piece of Turkish bread and raw veggies. I really recommend raw veggies because the patties are oil fried and raw veggies bring such a freshness to the table 😉 Also, this way I actually didn’t need any sauce. You can add one of your own choice though such as a fresh yogurt-garlic dip? Serve these patties as a snack or for dinner!
Ever since my younger sister Kajal has read my blog about my potato flat breads (aloo rotis) she has been saying she wants to make these breads herself very soon. What she actually meant is: “When are you going to make me some”? She works incredibly hard so this week I made them for her. While preparing the potato filling for my rotis (recipe here: https://spoonmyfood.com/2018/04/05/spicy-potato-flatbreadsaloo-roti/ ) I came up with an idea to make this yummy patty with potato, carrots and tempeh! These patties are very simple to prepare. I have cooked potatoes, mashed them and added some spices and some wonderful fresh lime juice. Wow! The lime juice makes this patty fresh even though it is fried. In another pan I fried the tempeh slices on one side and fried 3 garlic cloves, a pepper and 1 red onion on the other side. I really recommend this amount of garlic and onion for the best taste ever! Omit the pepper if you don’t like the heat! The next step is crumbling the fried tempeh. If you leave the tempeh in the fridge for a couple of minutes after frying it, it cools down quicker and crumbling with your hands is less painful :p Mix the spiced and mashed potatoes with the crumbled tempeh, garlic and onion and you are ready to get to the last part: frying the patties.
The very first time I ever made patties, I only used bread crumbs but that was hardly enough to fry firm patties. Everything fell apart in the oil, making such a mess. Never again! Using a little bit of batter made of flour and water is a good vegetarian/vegan option to make those bread crumbs really stick to the patty and frying it becomes very easy.
