Last week my sister bought chia seeds. I love these seeds in salads but making chia pudding is truly my favorite way to use it. I find it so remarkable how such seeds can create that jelly effect by just soaking them in water or oat milk/other plant milk. Chia pudding is a quick, healthy, delicious and convenient breakfast because all you have to do is soak the seeds. That’s it!

Since I had more time for breakfast, I decided to add a little fruit sorbet to my chia pudding. It adds so much freshness and the sorbet is a lovely, cool and healthy sweetness for hot summer mornings. Chia pudding with a sorbet feels like eating dessert with ice cream for breakfast! How much better can it get? By adding some coconut oil or coconut milk you add good fats to this breakfast too. Fats saturate well.

Now, you are probably thinking a sorbet requires more work and you only want a quick breakfast. Well, you couldn’t be more wrong! All you have to do for the sorbet is mash some frozen fruits and mix it with a bit of coconut milk and maple syrup if you like it sweeter like I do. A little bit of condensed coconut milk is even better because this way you add sweetness and creaminess with only 1 ingredient. Voila, your quick sorbet is ready. It only took you like 2 minutes more than preparing the pudding! You can store the sorbet in a bowl in the freezer if you make it the night before. In the morning when your chia pudding is done (can’t express enough how easy this is:p) you scoop a bit of that sorbet and add it to your chia pudding. Yumness guaranteed 😉

If you eat this chia pudding as a dessert and it doesn’t have to be super healthy, you can add different toppings, whichever you like. I have added fruit but also little crisp sugar hearts. Salted caramel and grated coconut are also delicious options. Add only fruits, coconut and nuts for a healthy dish! Ingredients
- 3 table spoons of chiaseeds
- 200 ml of oat milk or 100 ml coconut milk and 100 ml of oat milk
- 1 table spoon of maple syrup
- Half a tea spoon of vanilla extract
- 1 tea spoon of coconutoil ( if you use oat milk only!)
- 4 frozen raspberries
- 4 frozen mango pieces
- 10 ml coconut milk
- 1 tea spoon of maple syrup
Instructions
- Put chia seeds in a bowl or glass
- Pour plantmilk in the bowl/or pour coconut milk and plantmilk in the bowl
- Add maple syrup and vanilla
- Add coconut oil.
- Stir, put a lid on top and leave it in the fridge overnight
- Mash frozen frozen fruits with a fork
- Mix with little bit of coconut milk or other plantmilk.
- Add maple syrup and stir. Syore in freezer when you are using it the next morning
- Add to the chia pudding and top with your favorites!
