Perhaps it is very offensive to some people to say that I really dislike bananas that are turning brown but it is just the plain truth. I like them when they are still firm and yellow. As soon as I taste or see the brown spots, my appetite just disappears. Last week I bought bananas but actually forgot to eat them resulting in moment of frustration because I really don’t like to throw away food. I actually don’t throw away food because I always find a way to use fruits and vegetables in different kind of dishes. However, the only things I could think of what to do with the brown bananas was bake a banana bread or muffins and I really didn’t feel like that because it felt like a 1000 degrees outside the past couple of days here in Holland. Asking me to turn on an oven in the heat is like asking me to voluntarily go jog. I won’t do it!
Long story short (not really obviously) I suddenly thought of baking the banana for a short period on the stove with some oats because I really craved some oatmeal instead of a sandwich. Born was the Baked Oats & Banana! It was so ridiculously easy. I heated some coconut oil, added a couple of table spoons of oatmeal mix of rolled oats and coconut, vanilla, maple syrup and a handful of mixed nuts. I baked it for 5 minutes on low heat while regularly flipping it with a spoon. After 5 minutes I added a little bit of extra coconut oil and baked the sliced banana brown on both sides. When the banana is done, the oats and nuts are baked properly too. So yum! Especially when you add strawberries or raspberries as a fresh and less sweet ingredient. You can prepare larger portions of oats and store the baked oats in an airtight container and add to your yogurt or just eat it with fruit.
