The past couple of weeks, it has been so hot here in Holland that cooking only hot dinners was not on my to-do list. I am definitely not a great fan of summer. Sure, I like a little bit of heat with enough wind but with temperatures this high, I’d rather sit under a tree in a forest and I have done that a lot!
Still we have got to eat right? I have basically been living off salads, so I thought to myself ‘why not share one of the best salad tips with you?’ I love salads a lot but they have to satisfy too. This simple salad is made with black rice pasta so it is gluten free and vegan! You only have to cook the black pasta very shortly. Add lots of my favorite fresh and raw veggies such as green and red bell peppers, beets, radishes, lettuce, cherry tomatoes, carrots and cucumbers and the rainbow will appear on your plate . Obviously this is not only a great salad for grown ups. Kids will love the colors!
I often make my own dressing of garlic, a chili pepper, soy sauce,lime juice and maple syrup but I wanted some vegan mince to really fulfill my appetite. To keep it simple, I cooked a bit of vegan mince with some sprouts (optional) in garlic, pepper and onion and I have added the dressing to the mince after it had cooled down. This way you have a dressing and a great protein source in one: a Vegan Mince dressing!
