Coconut-Pistachio-Rose Popsicles are the perfect way to cool off on hot days. Creamy, sweet, crunchy and fresh are the best words to describe this summer treat!
It has been crazy hot in Holland the past couple of weeks. When I say crazy hot, I could be over reacting depending on how much you like the heat. I am really not the greatest fan of summer. I often feel revived when the suns shines but the heat in the afternoon is something I wish I didn’t have to handle. Luckily for me I have above mentioned Coconut-Pistachio-Rose Popsicles in my freezer to feel a bit of freshness. When not eating ice cream, I work with kids. I often go outside in search of cool places with shadows and in my free time I always find a big old tree that functions as my life saving shelter. Yes I am definitely more of a Fall/Winter woman! Since it’s going to take a couple of months to get to Fall, I am coming up with ways to cool off and still be creative in the kitchen. What can I say: a Kitchen Witch will endure the heat for some deliciousness. Besides being very pretty and delicious, these Coconut-Pistachio-Rose Popsicles are incredibly simple to make. If you can mix up a couple of ingredients and put them in the freezer, you are so qualified to make the popsicles! 🙂 Use delicious ingredients such as coconut milk, condensed coconut milk, some rose petal tea and you are good to go! When you have some edible dried rose buds, put them in a little bit of boiling water. The water will turn into a tea that is a bit green and this tastes delicious in these popsicles. I have also added some frozen fruits. Of course you can add fresh ones too. Actually, the hardest part is waiting until the Coconut Popsicles are decently frozen. I recommend making these a day before so you can enjoy the popsicles in the afternoon the day after. Kids will love it too. The recipe is down below.
