So, I guess you have heard me about the Dutch heat this summer. I don’t want to complain too much about the weather but since it is typically Dutch to do so, I will bother you with some more sob stories. Just kidding! You can’t control the weather, just like many other things in life. One just has to suck it up. Unfortunately for me, our house gets very hot and cooking is a threat to life (slightly exxagerated ) I don’t like to linger on thoughts of complaints for too long so I get busy with finding solutions such as eating ice cream, eating cold dinners and a very cold breakfast: Overnight Oats & Chia Yogurt With Condensed Coconut Milk (Vegan)!
The plan was to spend as little as time possible in the kitchen with maximum deliciousness. How? Well, use the fridge and freezer ofcourse! I have mixed up some vegan Alpro yogurt with condensed coconut milk. I am so passionate about condensed coconut milk. It’s perfect in desserts with the right amount of sweetness and coconut flavor. Pour the yogurt over some chia, crushed pistachios and oats and leave it in the fridge. I have put mine in the fridge for a couple of hours and stored it in the freezer afterwards.
That was one delicious cool breakfast the next day. It is as simple as that. My mom’s husband had picked some cherries for the last time this season and I got a whole bag to take home with me. That was so awesome of him! I topped my breakfast with these freshly picked cherries and some red currants but you can add add fruit you like. Have you ever tried this combination?
