This summer in Holland screamed for ice cream and being the sweet home cook that I am, I had to listen! Last year, I made my first home made ice cream and I have loved making new flavors ever since. Making ice cream at home is really not that hard. I don’t even have an ice cream machine. In stead, I always use two ingredients: one that becomes solid in the freezer and one that doesn’t. This way the icecream is not liquid but still creamy at the same time. Delicious ice cream without an ice cream machine! Cool and cold!
I use a combination of condensed milk and whipped cream because the whipped cream does become a solid and the condensed milk only gets colder. However, this time I wanted to make a vegan version. To be honest, I wondered if it would work as well. Condensed coconut milk can be used as a vegan substitute for condensed milk. It is creamy, incredibly flavorful and easy to use. When you use it in cakes, you do have to experiment with the amounts you use because it is still different from regular condensed milk. I have experimented with it a couple of times and when I make the perfect cake, I will add the recipe to my blog ofcourse.
This Toasted Oatmeal Ice Cream obviously is different from a cake so I just mixed the condensed coconut milk with vegan whipped cream. I had bought the vegan whipped cream because I was really curious how it tasted. The instructions were very clear. Yoy really have to shake the box before you use it. I often experiment in the kitchen because I have a good sense of taste and structures. However, this was a new product for me so I actually read the instructions and I was happy I did. See, I expected a whipping cream I had to whip before use but this was already whipped and sweetened. It tasted delicious. It was sweetened though, so I had to diminish the amount of condensed coconut milk since that one is already sweetened too. I guess that was the hardest part in the process of making this super simple ice cream. I toasted my usual oatmeal mix of oatmeal, mulberries and grated coconut and let that cool.
When the toasted oatmeal has cooled down, you only have to carefully mix the vegan whipped cream with the condensed coconut milk and mix it with the oatmeal. Then you have to wait and let it freeze.
